Another kind of comfort food that allows you to empty the vegetable bin of your fridge.
It's easy, lazy and pretty tasty... what else could we need?

Ingredients:

- 1ts oil
- 2 cloves of garlic
- 1/2 onion
- 1 can of red kidney beans
- leafy vegetables (e.g. kale, baby spinach,...)
- 3 fresh tomatoes
- 2tbs mild paprika
- 1tbs cayenne pepper
- 1tb dried parsley (fresh would be better)
- salt to taste


Instructions:

Add oil into your pan and heat it. Then stir minced garlic and onion until it golden. Add the leaves and diced tomatoes. When it's almost cooked, add the well rinsed beans and all the spices. Let it cook a few more minutes and it's done.

Garnish with avocado, a sprinkle of seeds and lime juice.

Don't hesitate to add or reduce the amount of cayenne pepper or chili.
