"Chicken" green curry

Vegan chicken green curry


My first post on this brand new blog! I'm so excited! Youhouuuu!

Let's start with a plain, classic but super tasty recipe.
"Thai" green curry is one of my favorite comfort food, it has everything you need to be satisfied: coconut, spices and a bunch of veggies. I use to add a little extra chili on mine because... you know... spicy food is the best.

Ingredients:

For the "chicken" marinade:
   - 2 cloves of garlic
   - a piece of ginger
   - juice of 1/2 lime
   - 2tbs soy sauce

- 1 bowl of textured soy protein
- 1 can of coconut milk
- 2tbs of green curry paste
- all the veggies you like (here: carrots, cabbage, baby corns and bell pepper)

Instructions:

First, combine minced garlic and ginger into a bowl. Add the other marinade ingredients and textured soy protein. Pour boiling water to cover it completely. Let it absorb the liquid during 30min.

Cut your veggies and put them on a pot. Add soy protein along with the marinade. Add coconut milk and green curry paste.

Let it cook 20 min or until the veggies are softened.

Serve with rice. Garnish with sesame seeds and a squeeze of lime.
